Recipe – Easy Vegan Banana Bread

Recipe: Easy Vegan Banana Bread
Overall Cook/Prep time: 50 minutes (Add 15 minutes or so for banana ripening)

Ingredients:

  • 4 very ripe bananas
  • 1 1/2 cups whole wheat flour
  • 1/3 cup Earth Balance, melted
  • 1/4 cup applesauce
  • 1 teaspoon vanilla extract
  • 1 cup sugar
  • 1/4 teaspoon salt
  • 1 teaspoon baking soda
Ok, so…
The recipe calls for 4 very ripe bananas.
We got 4 freshly purchased bananas.
I know, I know… “YOU NEED RIPE BANANAS FOR BANANA BREAD!!”
Luckily we found a handy little trick on Pinterest!
Just take your freshly purchased bananas and put them on a pan.
In these pictures the bananas are on a pan, on a Silpat thing.
Silpat is a non-stick rubber thing, it’s super cool! SILPAT!
You don’t really need a Silpat, you can rough ride it if you wanna clean the pan later.
Anywho, bananas, pan, oven, 400 degrees, 15 minutes and…

 

 

BOOM.

Cool them puppies down in the freezer for about 5 minutes and you’ve got ripened bananas ready for use!

Now the “recipe” can begin… unless you already had ripened bananas lying around the house for just such an occasion.
Which in case… I guess, you’d start here and skip that whole cool Pinterest baking trick…

Take the bananas and the butter and throw them in a bowl, then mash ’em up all sorts of good!

 

 

Once they are all mashed up, dump in the applesauce, vanilla, sugar, and salt!
Mix all that stuff up… with a fork. (or a spoon, or a mixer thing)

 

 

Drop in the flour and baking soda and mix it up again.

Take your mixture and glop it into a greased up loaf type pan.
I guess you could use a smaller loaf type pan?

Then you BAKE!
Uncovered for about 15 minutes.

 

 

After the 15 minutes are up, cover the loaf type pan with some tin foil and resume cooking for an additional 30 minutes or so.
OR If you know about the toothpick trick, do that.

The toothpick trick is an olden times trick bakers used back in the day!
Before thermometers and such. (this statement is not based on facts)

Just take a toothpick and stick into the middle area of the bread and then take it out.
If the pick comes out clean then your baking time is up!

 

 

Take the bread out and avoid picking at it…
Cause it’s MEGA HOT and you’ll burn your fingers…
And you might accidentally drop your slice of bread on the floor…
for reals.

Once it cools, you’re golden.
Smear summa dat butter on it.
Smear it real good.
